We have company in town this weekend, the perfect time to try out a new recipe!
I made Baked Chicken Legs and Black Bean Salsa.
We spent the day outside at the pool together, so something fresh and healthy sounded perfect.
I chopped two Roma tomatoes, 1/4 of an onion and 1/4 of a bell pepper.
I added one can, drained, of First Street whole corn and one can, drained, of First Street black beans.
I mixed these together and squeezed lime on top.
Then, I started working on the chicken.
I lined a glass pan with foil and sprayed the foil with Pam.
I placed the chicken on the foil and added salt and pepper.
The meal was amazing and light and healthy.

Ingredients - Black Bean Salsa
- 1/4 Chopped Onion
- 1/4 Chopped Green Bell Pepper
- 2 Roma Tomatoes
- 1 Can First Street Sweet Corn
- 1 Can First Street Black Beans
- Lime Juice
Ingredients - Baked Chicken Leg Quarters
- Set oven to 350 degrees
- Line glass pans with foil
- Spray foil with Pam
- Lay chicken in Pam
- Salt and Pepper Chicken
- Bake for 1 hour, rotating at 30 minutes
- Broil on Low for 2 minutes if browning desired
