I love baked potatoes. I mean love.
When I was expecting Julia (I can't say the word pregnant, because dad reads my blog, and we say the word expecting. Love you dad!)... ok, when I was expecting Julia the only thing I could keep down was baked potatoes.
You know how you have a baked potato and sometimes it is perfect? It is crispy outside and perfectly done inside?
Well, I've been trying different things and you guys.... I've got it.
(if you have known these secrets for years and this is old news, just keep that to yourself today, ok?)
First, scrub the potato with a scrubber.
Then dry the potato off, like a beautiful, precious baby.
Cut out any sprouts. Just do it. Mamma said so.
Brush olive oil on the beautiful potatoes.
Poke holes in the potatoes. Do this at 4:52pm when the kids are going crazy so that you can poke something safely.
Cover with Sea Salt.
And this is the most important part. Ready? No foil!
Wrapping the potato is foil actually steaming the potato.
Place those potatoes directly on the oven rack.
About one hour or until they gently given when squeezed with an oven mit.
Now, go enjoy some potatoes!
